Welcome to Meatless Mondays where I will be sharing meatless meals as part of a sustainable and healthy lifestyle. Choosing meat-free meals on Monday is a great way to look and feel better. It can be as simple as swapping chicken nuggets with a bean and rice burrito, putting pork chops aside in favor of a spicy three-bean chili or trying a veggie burger instead of a hamburger.
Going meat free one day each week is a powerful way for each of us to reduce our ecological footprint and reconnect with foods that are nutritious, delicious and cruelty-free.
The health benefits are clear that people who eat fewer animal products have lower rates of obesity, dementia, arthritis, high blood pressure and other serious medical conditions.

PASTA e FAGIOLI – (PASTA WITH BEANS)
I have stopped eating meat and anything “white” last month. Since I am in Italy, I cannot have my way. I have substituted the original white pasta with spelt pasta and convinced everyone around me to eat it also. I love this pasta! It is so light and I do not get that heavy, upsetting feeling in my stomach anymore.
I have been fortunate enough to be gifted with organic home-made olive oil, tomato sauce and abundance of fresh of vegetables and herbs.
This bean pasta is very simple to make. It is basically a bean soup with pasta added at the end. It is sooooo yummy especially as leftovers.
INGREDIENTS – makes 4 ¼ cup olive oil 2 large cloves garlic, minced 5 branches of fresh rosemary, minced 1 bay leaf 1 tsp hot pepper flakes 2 tsp sea salt 2 tbsp of tomato sauce Vegetable broth 2 ½ - 3 cups of soaked cannelloni beans Ground black pepper for taste Spelt pasta
DIRECTIONS In a saucepan combine the oil, garlic, hot pepper flakes and ¾ of minced rosemary over medium-low heat. As the garlic begins to color, stir in the beans and more than enough vegetable broth water to cover. Bring to a boil, stirring frequently. Lower the heat and add tomato sauce, salt and remaining rosemary. Simmer gently for 5 minutes. Stir in the pasta and simmer over medium heat according to time labeled on the pasta. Serve with a bit of olive oil, black pepper and parmesan cheese.
